This was the first coffee we ever bought from Cofinet. When we was beginning our roaster journey we knew we wanted to buy something unique and stand out. After cupping lots and lots of coffees we settled on this. A truly standout on any coffee table. This is currently our most expensive coffee.
A very complex natural Sidra. Everytime we brew this coffee we get new flavour notes. We could put 20 different things on the bags. However, we experience prominent Pineapple, strawberries and sweet molasses. Lending itself to all brew methods. The coffee is roasted with solubility in mind. Even the beginner will be able to brew this with considerable ease. A note im also picking out is a very niche one, but think a beautiful Gewurtztraminer from Alsace. slightly spicy, off dry white wine.
This coffee was grown by Jairo Arcila at the farm Santa Mónica. This coffee was carefully hand-picked in order to select only the ripest cherries and then hand sorted to remove any defects. The coffee was sundried on raised beds in temperature controlled conditions until the ideal moisture content is achieved.
Sidra is a hybrid between Bourbon and Typica varieties. Its sweet and bright profile is a characteristic of this unique variety, said to have originated in Ecuador. Sidra's height is medium, the yield is high, all the cherries ripen to be red, and the trees are tolerant to leaf rust and drought but are susceptible to pests.
