Description: For those keeping an eye on our offering you m might notice another yellow bourbon. We was late to the party last year with most of them selling out. Not this year. We’re ready. Already our second of the new harvest. You can expect a wild profile which is both clean and expressive. Using a lacto washing method is allowing greater control and an enhancement of sweetness, clarity and in this case acidity.
The lines are getting blurry in coffee now with processing. But my view is that if youre using things to enhance what’s already there and not overpowering or completely changing the cup profile, then its good with me.
