This year, as our first Christmas as a coffee roaster, we wanted to break away from the usual seasonal Costa Ricans and finish the year with something truly special. We cupped samples from multiple importers, but one coffee stood out immediately.

Our release is a yeast-inoculated, thermal-shock washed Castillo from the renowned Jorge Mira of El Jaragual — a humble varietal elevated through ultra-modern processing.

The moment we tasted it, I was taken back to Christmas Day in Australia—40-degree heat, pavlova on the table. Crisp vanilla meringue, fresh berries, yellow fruits: all those flavours live here.

It’s one of the most complex coffees I’ve ever roasted. The profile transforms as the temperature drops. On the nose: strawberry, peach and rose. When hot: strawberry and cream. As it cools: brighter acidity, mango, physalis and soft vanilla florals. And at very cool temps, it becomes like melted vanilla ice cream, tropical fruit and peaches — almost like a Solero.
